Looking for something fun to do on a date besides going out to dinner…again? Well, if you live near Farmington, Utah then head on over to Farmington Station. There’s a shop called ‘Redstone Olive Oil’ just east of the movie theater. I hesitated to go in a couple of times, because I was afraid of a hard sales job. Then one night, Bill and I ventured in and we were pleasantly surprised.
The owners John & Tina are very friendly and oh-so helpful. John usually works the front of the store and will give you as many taste-tests of their award-winning olive oil or vinegar your little heart desires. With over 50 flavors of each, John explains their origin and how they pair together. He knows his stuff and comes up with some delicious combinations. He’ll also offer you several recipe ideas using the oil and vinegar he suggests.
The Redstone Olive Oil family loves to cook and celebrate their Italian heritage with food and great flavor. They focus on family tradition and provide pure and healthy ingredients so that we get to make food that tastes amazing! I recognized quickly that this was a perfect Family Food Roots story!
We’re sure thankful they brought that passion to our town! The tag-line on their front door is: “Friends DON’T let friends use grocery store olive oil.” I was already a believer in this concept but now I have solid information to back it up, thanks to John & Tina.
Not only do they sell various imported olive oils and balsamic vinegars, but also specialty oils, fresh hand-made pastas, house-made spice blends, flavored salts, hand-stuffed olives and recipes they’ve created. There’s usually a plate of something tasty to sample and plenty of bread squares for tasting the oil and vinegar.
And, yes, we did end up buying a bottle of each, but the cool thing is once those bottles are empty, we can take them back and get 15% off our next purchase. With shops in St. George, Draper and Farmington, Utah, you’re sure to find one near you. They also offer mail-order via their website, just click here or go to http://www.redstoneoliveoil.com!
From their family’s passion to our dinner table, I love what they are doing at Redstone Olive Oil. And now for the best part…printed with their permission, here are the two recipes I made for my family using my new Tuscan Herb Olive Oil and Cranberry Pear Balsamic Vinegar…
Creamy Tuscan Chicken
- 1 ½ pounds boneless skinless chicken breasts
- 5 T Redstone Tuscan Herb Olive Oil
- 1 cup heavy cream
- 1 cup spinach, chopped
- ½ c chicken broth
- 2 T Redstone Cranberry Pear Balsamic
- 2 tsp Redstone ‘I Love Garlic & Tuscan Sun Spice Blend
- 2/3 cup parmesan cheese
- ½ cup sun dried tomatoes
In a large skillet add olive oil, brown chicken on medium high heat for 3-5 minutes each side. Remove chicken, set aside. Add heavy cream, chicken broth, Garlic & Tuscan seasoning, balsamic and parmesan cheese. Whisk over medium high heat until the sauce starts to thicken. Add spinach and tomatoes. Add the chicken back to the pan, warm through and serve over pasta (if desired). Salt and pepper to taste.
Tuscan Summer Salad
- Mixed greens
- Walnuts, pecans or cashews
- Crumbled feta or goat cheese
- Dried cranberries or rasins
- Sliced pears
Dressing: whisk equal parts of Redstone Tuscan Herb Olive Oil and Cranberry Pear Balsamic vinegar together. Drizzle over salad right before serving.
As the Redstone family says: ‘Get creative, the possibilities are endless!’
