I enjoy making a fuss over Sunday Dinners. It’s a perfect time to have the family gather around and enjoy a slightly fancier dinner than we have during the week. The table is always set with nicer dishes, glasses and cloth napkins. We enjoy talking, eating and sharing whatever happens to come up. Good comfort food, family time and fun discussions – these are the ingredients for a wonderful Sunday Dinner.
Today I decided to go fresh and simple. Here’s what was on the menu:
Pork Chops with sautéed mushrooms and onions
Mashed Potatoes and mashed potato/yams*
Fresh Corn (cut off the cob since Billy has braces)
Fresh Spinach (from my friend Mary’s garden)
Salad
Bill cooked the pork chops and they came out moist and tasty. Here’s what he did:
He sprinkled the chops with garlic granules, onion powder, season salt and lemon pepper. Then he “steam fried” them, a technique he thinks he invented (I guess we’ll give him the credit). He sprayed our grill pan with a little bit of Pam and then cooked the chops for about 5 minutes on each side. Then he added a little water to create a steam effect and covered loosely with aluminum foil to keep the moisture in. Just before the chops were done, he added a little butter to brown for extra flavor.

So my dear friend Janet is an excellent cook. Like me, she is a huge “foodie”. In fact, she has taught me many things about healthy eating over the years and is an inspiration to me when it comes to preparing good food. If I could afford to, I would hire her to come and be our personal chef…she’s that good! She makes all this delicious, but super healthy food and that makes me happy (especially when I don’t have to cook it)! Here’s what she made for Sunday Supper this week:

Bring on the mashed potatoes and yams! I am going to kidnap Janet the next time I see her out on a run and whisk her away to my house and tell her I won’t let her go until she roasts some delicious yams for me. YAM RANSOM. Delicious.
