Chicken Tacos

Ever have one of those days?  You know what I’m talking about…you haven’t stopped once to even go to the bathroom, much less figure out what in the world to cook for dinner.  You’ve been running kids around to orthodontist appointments, helping with homework, picking kids up from practice and solving world hunger.  But you somehow feel this obligation to feed this hungry mob.  Plus, you’re hungry too and need something somewhat healthy to eat for dinner.

I remember someone told me once how important it is to get dinner figured out by 2:00 pm…you know, get it started, get it cooking, get it planned, whatever.  In my reality, that was a pipe dream and something that only happened on those rare occasions when pigs began to fly.  Well, this recipe is one answer to this dilemma…it’s way too easy and the only thing you need to remember is to keep frozen chicken breasts on hand and to plug your crock pot in at around, well, yes it is true…2:00 pm!

Chicken Tacos

  • 4-6 chicken breasts (depending on the size of your mob)
  • Pace (mild) Salsa
  • 1/2 cup water
  • Garlic, onion, salt and pepper to taste
  • Crockpot

Pull chicken breasts out of the freezer.  Toss (gently) into crock pot.

Pour as much salsa as you’d like over said chicken.  Pour in water.  Season to taste.  Turn crockpot on high; cover with lid.  Walk away.  Cook 3-4 hours or until chicken pulls apart easily with a fork.  Serve with refried beans, warm tortillas, grated cheese, chopped tomatoes, salsa, avocado, sour cream and chopped green onions.   Or make Chicken Taco Salad-also delicious and simple to prepare!
