I just discovered something very exciting…well at least I think it is. You can make your own jello and Knox Blox, without using the boxes of “Jell-O” brand gelatin. The photo above shows the various Halloween shapes, although you can’t really tell what they are…bats, pumpkins, you get the idea. Anyway, making homemade was SO easy and yes, OK, perhaps a little more money, but completely worth the health benefits…
Here’s what’s in a package of “Jell-O” brand, orange flavored jello:
Sugar, gelatin, adipic acid (for tartness), contains less than 2% of natural and artificial flavor, disodium phosphate and sodium citrate (control acidity), fumaric acid (for tartness), yellow 6, red 40, bha (preservative).
Once again, what is all that stuff? And here’s what’s in the “Knox Blox” I made last night:
100% natural, organic mango lemonade fruit juice, Knox gelatin, water and a little honey
That’s it! Not bad huh? The true test is the kids…they loved them and honestly, they tasted way better and more healthy. I got the juice on sale for about $.75 and the Knox, well I don’t recall, but it wasn’t too bad. Plus you can buy it in a large box (with 32 packages) and get a better price per envelope. You need 4 to make the Knox Blox, but only 1 for regular jello. Combine with your favorite pureed fruit or healthy fruit juice and you have jello without all the additives and dyes!
The knowledge that my family was eating something good for them, made it worth the extra cost! The recipe is on the Knox gelatin box…so easy and fun. Here it is:
Fruit Juice Knox Blox
(makes about 9 dozen)
- 4 envelopes “Knox” unflavored gelatin
- 1 cup cold fruit juice
- 3 cups fruit juice, heated to boiling
- 2 T sugar or honey (optional)
Sprinkle gelatin over cold juice in a large bowl; let stand 1 minute. Add hot juice and stir until gelatin completely dissolves, about 5 minutes. Stir in sugar or honey if desired. Pour into 13x9x2 inch pan.
Refrigerate until firm, about 3 hours. To serve, cut into 1-inch squares. Store in refrigerator.
