Holy Guaca-Molé

I love guacamole, don’t you? Born and raised in California, I’ve eaten my share of Mexican food and I’m here to tell you that good guacamole is critical!

Authentic guacamole is chunky and filled with flavor which is why I add red onions, tomatoes, fresh garlic, lime and jalapeño! Stir all of this into ripe, creamy avocados and you have Holy Guaca-Molé!
(My husband likes to watch a golf show called Holey Moley so he named this recipe for me…thanks Bill!)

My official taste testers said this: “the last time we had really yummy guacamole was in Mexico in 2011. We love yours and could eat gallons!” Now, that’s really good news since making my Holy Guaca-Molé is a lot easier (and cheaper) than traveling to Mexico!

Whip up a batch of Holy Guaca-Molé today and serve with your favorite tortilla chips. I highly recommend Don Julio Southwest Style White Corn Chips which are light, crispy and way too salty, just the way I like them!

Holy Guaca-Molé

  • 2 avocados
  • 1/4 cup chopped tomato
  • 1/4 cup chopped red onion
  • 1 tsp chopped jalapeño
  • 1/3 cup chopped cilantro
  • 1 chopped garlic clove
  • 1/2 lime, juiced
  • Salt and pepper to taste

Cut avocado in half lengthwise. Hit pit with knife, twist out and set aside. Scoop avocado into bowl and squish with fork. Chop next 5 ingredients; add to bowl. Squeeze in the lime. Add spices and pepper to taste. Mix all ingredients to combine. Serve with tortilla chips, your favorite Mexican dish, eggs or straight from the bowl!

Root Notes

  • We’re empty nesters over here so this is a fairly small batch. Just double it for your family or or larger gatherings.
  • If you don’t have red onions (or are they called purple?) don’t fret…use whatever onion variety you like or have on hand: white, yellow, green or even shallots!
  • I don’t like to overpower the guacamole with heat so I use just a touch of jalapeño but feel free to add more.
  • The fresh garlic, lime, jalapeño, salt and pepper make a flavorful guacamole but If you want even more seasoning, add garlic granules, onion powder and/or cumin to taste (suggest 1/2 tsp of each).
  • Put the avocado pit in the middle of your finished guacamole, cover and place it in the refrigerator until ready to serve. This will help prevent brown guacamole for 1-2 days.
  • Did you know avocados also have great health benefits? In a single 3.5 oz serving, they have more potassium than bananas and contain vitamins K, C, B5, B6, E, A, B1 (thiamine), B2 (riboflavin), B3 (niacin) and small amounts of magnesium, manganese, copper, iron, zinc and phosphorous. They also have 15 grams of healthy fats “…they don’t just contain any fat. The majority of the fat in avocado is oleic acid — a monounsaturated fatty acid that is also the major component of olive oil and believed to be responsible for some of its health benefits.” They are also loaded with fiber and can lower your cholesterol and triglyceride levels! Who knew!?? Read more about the benefits of avocados here. Source: Healthline.com

With so many health benefits, you should probably eat my Holy Guaca-Molé every day!
