I love guacamole, don’t you? Born and raised in California, I’ve eaten my share of Mexican food and I’m here to tell you that good guacamole is critical!
Authentic guacamole is chunky and filled with flavor which is why I add red onions, tomatoes, fresh garlic, lime, jalapeño and plenty of spices! Stir all of this into ripe, creamy avocados and you have my Holy Guaca-Molé! Side note: my husband likes to watch that silly golf show called Holley Molley so he named this recipe for me…thanks Bill!
My official taste testers said this: “the last time we had really yummy guacamole was in Mexico in 2011. We love yours and could eat gallons!” Now, that’s really good news since traveling to Mexico isn’t possible right now.
If you want to feel better about not being able to travel out of the country, just make my Holy Guaca-Molé…seriously, it will help!
- 2 avocados
- 1/4 cup chopped tomato
- 1/4 cup chopped red onion
- 1 tsp chopped jalapeño
- 1/3 cup chopped cilantro
- 1 chopped garlic clove
- 1/2 lime, juiced
- 1/2 tsp salt
- 1/2 tsp garlic granules
- 1/2 tsp onion powder
- 1/2 tsp cumin
- Ground pepper to taste
Cut avocado in half lengthwise. Hit pit with knife, twist out and set aside. Scoop avocado into bowl and squish with fork. Chop next 5 ingredients; add to bowl. Squeeze in the lime. Add spices and pepper to taste. Mix all ingredients to combine. Serve with tortilla chips, your favorite Mexican dish, eggs or straight from the bowl!
- We’re empty nesters over here so this is a fairly small batch. Just double it for your family or or larger gatherings.
- If you don’t have red onions (or are they called purple?) don’t fret…use whatever onion variety you like or have on hand: white, yellow, green or even shallots!
- I don’t like to overpower the guacamole with heat so I just use a touch of jalapeño for flavor. Feel free to up your heat if so desired!
- As for the lime, I feel like 1/2 juiced is perfect. Again, add more if you like a more tart guacamole!
- Once finished and before serving, just put the pit in the middle of your guacamole, cover and place it in the refrigerator. This will prevent brown guacamole for 1-2 days.
- Did you know avocados also have great health benefits? In a single 3.5 oz serving, they have more potassium than bananas and contain vitamins K, C, B5, B6, E, A, B1 (thiamine), B2 (riboflavin), B3 (niacin) and small amounts of magnesium, manganese, copper, iron, zinc and phosphorous. They also have 15 grams of healthy fats “…they don’t just contain any fat. The majority of the fat in avocado is oleic acid — a monounsaturated fatty acid that is also the major component of olive oil and believed to be responsible for some of its health benefits.” They are also loaded with fiber and can lower your cholesterol and triglyceride levels!
